BLUE - CHEESE FETTUCCINE 
1 tbsp. butter
1/3 c. chopped walnuts
1 1/2 oz. blue cheese (about 1/3 c. crumbled)
1 1/2 oz. Parmesan cheese (about 1/3 c. grated)
6 oz. fettuccine or other egg noodles
1/2 c. heavy cream
Salt & pepper
2 tbsp. chopped scallion greens

Melt butter in a small saucepan, add walnuts and cook until lightly browned, about 1 minute. Crumble blue cheese and grated Parmesan. Cook pasta in boiling, salted water until done, drain and return to hot pan. Stir in cream, cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over low heat until sauce thickens, 1-2 minutes. Stir in walnuts and scallions. Taste for seasoning and add salt and pepper if needed. Serve at once.
