PORK QUICHE FOR BREAKFAST 
1 (8 inch) pie shell, prepared
1 c. heavy cream
8 eggs, beaten
2 c. Swiss cheese, grated
2 lbs. cooked pork, sliced
1/4 c. parsley, fresh, chopped
1/2 c. butter, melted
6 slices smoked pork
1 pinch nutmeg
Salt and pepper to taste

Combine eggs, heavy cream, and Swiss cheese in a mixing bowl and season to your liking with salt, pepper, and nutmeg. Arrange slices of smoked pork in the bottom of the pie shell. Add a little of the egg mixture and sprinkle parsley.

Arrange the sliced pork in layers, adding egg mixture between each layer. Fill pie shell until 1/8 inch from the top of the crust. Pour melted butter over top of pie and bake in an oven at 350 degrees for about 1 hour.

When top is golden brown and center is firm, quiche is done. If top browns too fast, cut back oven temperature or cover pie. Remove from oven and let rest for 15 minutes before cutting. Cut into 6 slices, garnish with fresh fruit, and serve. Serves: 6. (Prep and Cooking Time: 1 hour 30 minutes)
