SNICKERDOODLES COOKIES 
2 eggs
1 c. shortening
1 1/2 c. sugar
2 3/4 c. flour
1 tsp. baking soda
2 tsp. cream of tartar
1/2 tsp. salt

ROLL MIXTURE:

2 tbsp. sugar
1 tbsp. cinnamon

Cream shortening, 1 1/2 cup of sugar, and beat in eggs 1 at a time. Sift flour, soda, cream of tartar and salt, stir in. Refrigerate dough for several hours. Take small spoonfuls of dough and shape into balls about the size of walnuts. Roll in 2 tablespoons sugar and 1 tablespoon of cinnamon mixed together. Place on ungreased cookie sheet 2 inches apart. Bake at 375 degrees for 10 to 12 minutes or until lightly browned on edges. Yield 6 dozen crisp cookies.
