CROSTINI WITH TOMATO PESTO 
Tomato Pesto Spread:

1 c. canned crushed tomatoes
1/4 c. pesto
Salt to taste

Combine the tomatoes and pesto. Mix well. Taste and add salt, if needed. Spread about 1 1/2 to 2 teaspoons on each crostini slice. Sprinkle with additional Parmesan, if desired.

Crostini:

1 French baguette
Extra Virgin Olive Oil
Grated Parmesan Cheese

Slice the baguette crosswise into 1/2 inch thick slices. Place on baking sheet. Brush one side of each slice with olive oil and sprinkle with Parmesan.

Bake at 400°F for 5 minutes. Turn each slice over and bake for an additional 10 minutes or until lightly browned. Serve with Tomato Pesto Spread.
