BLUEBERRY MUFFINS 
2 eggs
1/3 c. vegetable oil
1/3 c. sugar
1/4 c. maple syrup
1 1/2 c. skim or low-fat milk
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt, if desired
1/2 c. bran flakes (unprocessed bran)
1 1/2 c. blueberries, picked over and rinsed

In a large bowl beat the eggs and add the oil, sugar, syrup and milk, mixing the ingredients well. In a medium bowl, stir together the flour, baking powder, and salt. Add the flour mixture to the liquid mixture, stirring the ingredients until they are just blended.

Fold in the bran flakes and blueberries. Divide the batter among 18- 24 well-greased muffin cups, filling each about 2/3 full. Bake the muffins in a preheated 375 degree oven for about 25 minutes or until they are lightly browned. Remove muffins. Cool on wire rack.
