EASY PINA COLADA CUSTARD CAKE | |
This is the simplest "cheating" dessert! 1 box your-choice yellow cake mix (plus any ingredients it calls for) 1 (20 oz.) can crushed pineapple (Dole or Del Monte) 1 (14 oz.) can coconut milk (Goya) Follow instructions according to your cake mix, pour mix into baking pan. Add a full layer of crushed pineapple. Pour one can of coconut milk over the whole cake/pineapple. Note: Do not mix any of this into the cake mix! It is all layers. Bake according to cake package directions. While it bakes everything drops to the bottom making a custard as the cake rises to the top. Tip: I drained the juice from the canned pineapple and used that in my cake mix (with added water to make up the difference of what the directions called for), but you can just follow the instructions for the cake as is.
