SHRIMP FRIED RICE 
2 c. chopped cooked shrimp
1/4 c. oil
2 tbsp. soy sauce
Freshly ground black pepper
4 c. boiled rice
2 eggs, slightly beaten
1 tsp. salt
3 chopped scallions

Fry shrimp in oil in deep frying pan for 1 minute, stirring constantly. Add rice and soy sauce and fry for 5 minutes, stirring frequently. Garnish with chopped scallions. Serves 6. Diced, cooked chicken, pork, or ham may be used instead of shrimp.
