SHORTCAKE 
3 c. flour
4 1/2 tsp. baking powder
3 tbsp. sugar
1 tsp. salt
3/4 c. butter
1 egg, beaten
1 c. milk, dry

Combine dry ingredients and cut in shortening until well mixed. Add combined milk and egg and mix to a soft dough. Knead lightly on a floured board. Divide dough in half and put one into an 8 or 9 inch cake pan. Brush with butter and top with the 2nd half. Bake in a 400 degree oven until brown.

When ready to serve, separate layers. Brush bottom layer with butter. Cover with fruit. Cover with top layer, add more fruit. Top with whipped cream.

NOTE: Can make individual biscuits the same way using a biscuit cutter and combining 2 biscuits with butter before baking.
