BASIL CHICKEN WITH BROCCOLI
STUFFING
 
1 pkg. chicken nuggets
1 lg. onion, cut in wedges
5 tbsp. butter
1/2 lb. mushrooms, sliced
1 1/2 c. water
1/2 c. white wine (cooking or) chicken broth
1 c. heavy cream
1 sm. red pepper, chopped
1/2 tsp. each basil and salt
1/4 tsp. pepper
1 c. broccoli florets
2 c. Stove Top stuffing mix

Saute chicken and onions in 3 tablespoon butter for 5 minutes. Add mushrooms; saute 3 minutes. Add 1/2 cup water and wine (or broth). Simmer covered 15 minutes.

Stir into cream, red pepper and seasons. Simmer uncovered 15 minutes. Stir occasionally. Combine broccoli, remaining water and butter in saucepan. Bring to boil. Stir in stuffing. Cover and remove from heat. Let stand 5 minutes. Serve with chicken. Makes 4 servings.
