MANDAZI (FRIED DOUGH, EAST
AFRICA)
 
2 to 2 1/4 c. flour
1 tsp. baking powder
2 tbsp. sugar
1/4 tsp. salt
1 egg, lightly beaten
3/4 c. water
Vegetable oil

Mix 2 cups flour, baking powder, sugar, and salt in deep bowl. Make a well in center and pour in egg and water. Gradually stir dry ingredients into water and egg. When well mixed knead with hands until dough can be gathered into ball. If dough is sticky add up to 1/4 cup more flour 1 tablespoons at a time.

Cover with dampened towel and let dough rest 30 minutes. Preheat oven to lowest setting. Line baking sheet with thick paper towels. Pour oil into deep fryer 2-3 inches deep and heat to 350 degrees. On lightly floured surface roll dough 1/2 inch thick. Cut dough into 2 x 1 1/2 inch pieces. Fry Mandazi turning occasionally for about 4 minutes or until richly colored and crisp. Keep warm in the oven on baking sheet until serving.
