OATMEAL RAISIN COOKIES 
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 c. butter, softened
1/2 c. brown sugar
1 c. sugar
1 lg. egg, well beaten
1 tsp. vanilla
1 1/2 c. old fashioned oats
1 c. raisins

Sift together flour, soda and cinnamon; set aside. Cream butter and sugars until fluffy, about 3 minutes. Mix beaten egg in thoroughly, then stir in vanilla. Add dry mixture. Mix in oats and then raisins. Give it a final mixing. Refrigerate, covered for 1 hour. Bake at 350 degrees for 10 minutes. Will look moist but will be a chewy cookie when cooled.
