MEXICAN STYLE BAKED TURKEY LOAF 
1 1/2 lb. ground turkey
1/2 med. onion, finely chopped
1 stalk celery, finely chopped
1/4 c. fresh cilantro, minced
1/2 bell pepper, finely chopped
1/2 red bell pepper, finely chopped
1/2 c. whole wheat bread crumbs
1/4 c. salsa
1 egg white, slightly beaten
1/4 tsp. fresh ground pepper
1 clove garlic, crushed
1/2 tsp. cumin
1/2 tsp. chili powder
Cayenne pepper to taste (optional)
Olive oil

Saute the onion, celery and bell peppers in a small amount of olive oil until just cooked through, but not translucent. Cool. Mix all ingredients until just blended together. Do not overmix.

Press the mixture into 4x9-inch nonstick loaf pan. Bake at 325 degrees for 45 minutes to 1 hour. Serve hot with a serving of salsa on the side. This recipe is very low-fat and really delicious!
