ZUCCHINI SQUARES 
3 c. shredded zucchini
3/4 c. whole wheat flour
1 tsp. baking soda
1 pkg. Butter Buds
1/2 c. onion, chopped
2 tsp. parsley
1 tbsp. low sodium soy sauce
Dash of Tabasco sauce
2 cloves garlic, minced
6 egg whites

Preheat oven to 350 degrees. Mix soy sauce, Tabasco, and egg whites. Beat until stiff peaks form. Mix dry ingredients; blend with egg white mixture. Pour into 13 x 9 x 2 inch pan sprayed with non-stick. Bake 25 to 30 minutes until golden brown. Makes 2 to 3 dozen squares.
