FIETA CHICKEN KIEV 
4 whole chicken breast, halved, skinned and boned
3 tbsp. butter
3 tbsp. Old English cheese spread
2 tsp. instant onion
1 tsp. salt
2 tbsp. chopped roasted green chilies
1/4 c. melted butter
1 c. cheddar cheese crackers, crushed
1 1/2 tbsp. taco seasoning mix

Pound chicken pieces flat. In small bowl, mix together next 5 ingredients. Place a portion of this mixture on each chicken breast, roll up. Tuck ends in and secure with a toothpick. Dip each rolled chicken breast into 1/4 cup melted butter and coat in a mixture of 1 cup cheddar cheese crackers, crushed and 1 1/2 tablespoons taco mix. Chill in refrigerator for a few hours. Bake at 375 degrees for 30 minutes or until fork tender. Serves 8.
