FIESTA CHICKEN 
4 whole chicken breasts (cut in 1/2)
3 tbsp. butter
3 tbsp. Old English style sharp cheese spread
2 tbsp. instant minced onion
1 tsp. salt
1 tsp. MSG
2 tbsp. chopped green chilies
1/4 c. melted butter
1 c. crushed cheese crackers
1 1/2 tbsp. taco seasoning mix

Pound and flatten each chicken breast piece. Beat together butter and cheese. Add onion, salt, MSG and chilies. Place a portion of mixture at one end of each chicken piece, dividing evenly. Roll each up, tucking in ends to enclose filling. Fasten with toothpicks.

Dip each roll in melted butter, then coat with mixture of crackers and taco seasoning mix. Arrange in 12 x 8 x 2 inch dish. Cover with waxed paper. Microwave on high 10-12 minutes, rotating dish 1/2 turns after 5 minutes, until done. Let stand 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
