GRANDMA'S CHICKEN FIESTAS 
1 (2 1/2 to 3 lb.) chicken, quartered wash and patted dry
1 sm. can mushrooms
1 sm. can stewed tomatoes
1 pkg. frozen broccoli chopped or spears
1/2 c. white wine
Parsley
Salt and pepper to taste

Brown chicken well in skillet on both sides on medium heat. Drain excess oil from skillet. Pour wine over chicken. Season both sides with salt and pepper, cover. Reduce heat and cook 40 to 50 minutes or until fork-tender. Remove chicken to serving platter.

In skillet, put broccoli (which has been cooked according to package directions), stewed tomatoes and drained mushrooms. Simmer for 10 minutes. Pour mixture over chicken. Serve with rice on the side and a fresh Italian salad.
