STUFFED EGGPLANT 
4 sm. eggplants
1/2 c. ground pork
1/4 c. ground beef
1/2 c. sliced onion
1/2 c. sliced tomatoes
2 eggs
Cooking oil
Bread crumbs
Salt & pepper to taste

Roast or broil eggplants and peel. Saute onion in 1 tablespoon oil and add tomatoes. When cooked, add ground meats. Cook covered about 15 minutes, stirring now and then. Season to taste. Divide into four portions and fill each broiled eggplant with one portion. Dust with bread crumbs and coat each with beaten egg. Fry in hot oil.
