RED PEPPER PESTO FETTUCCINE 
8 oz. fettuccine noodles
1 tbsp. olive oil
1 jar (7 oz.) roasted red bell peppers
1/2 c. prepared Pesto sauce
Salt & freshly ground pepper
Fresh grated Romano or Parmesan cheese

Cook fettuccine according to directions (slightly firm to bite). Meanwhile, drain, rinse and slice peppers. Heat oil in a heavy skillet (medium-low heat). Add the peppers and stir until heated. Drain fettuccine well. Return to pot. Mix in the peppers and the pesto. Season with salt and pepper. Top with grated cheese.

Double or triple this recipe (add a salad and some bread, delicious!).

The prepared pesto sauce found in the refrigerator section of the supermarket works great!
