BROASTED VEGETABLES | |
1/4 c. olive or vegetable oil 1 1/2 tsp. oregano 1/4 tsp. salt 1/2 pt. cherry tomatoes 1 yellow squash, sliced 1 red onion, sliced 2 tbsp. lemon juice 1 1/2 tsp. rosemary 1/8 tsp. pepper 1 zucchini, sliced 1 red pepper, sliced Garnish In large bowl, combine oil, lemon juice, oregano, rosemary, salt and pepper. Add cherry tomatoes, zucchini, squash, red pepper, onion toss to coat. Cover and let stand at least 1 hour. Preheat broiler, place marinated vegetables on rack set in broiler pan, brush with remaining marinade, broil 15 minutes, 4 inches from element, turn, baste. use all marinade. Assemble vegetables on platter in separate sections, garnish. Note: May substitute other favorite vegetables. |
