OUR FAVORITE SUMMER MEAL
(OUTSIDE)
 
1 lb. ground beef, lean
1 pkg. taco mix
3/4 c. water
1 can pinto beans, drained & rinsed
2 tomatoes, fresh, chopped
1 head leaf lettuce, torn
6 oz. Cheddar cheese, grated
1 bottle Catalina dressing

Brown and crumble ground beef. Add taco mix and water, mix. Add beans to taco meat. Simmer to let flavors set. In a large salad bowl, place lettuce, tomatoes and grated cheese. Just before serving, add taco meat and dressing. Toss. Serve immediately with Tostitos or soft flour tortillas. VARIATION: Crush medium size package of corn chips and mix into salad. Serves 6 to 8.
