ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
1 tsp. baking soda
1/2 c. nuts (optional, of course)
1 1/2 tsp. baking powder
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 1/2 tsp. cinnamon
1 tsp. salt

Bake in greased loaf pans at 350 degrees for 1 hour. Makes 2 loaves or 4 dozen muffins.

I got this recipe from a neighbor at Fort Carson, Co, in 1983.
