HOT GERMAN POTATO SALAD 
8 med. potatoes
1/2 lb. bacon
1/3 c. bacon fat
3/4 chopped onion
3/4 c. water
1/2 c. vinegar
4 tbsp. flour
2 tbsp. sugar
1 1/2 tsp. salt
1/2 tsp. celery seed
Dash of pepper

Boil 8 medium sized potatoes in skins until tender. Peel and slice and put into bowl. Fry 1/2 lb. bacon that has been cut with scissors into medium size pieces. Remove when brown and place on paper towels.

Cook in 1/3 cup of the bacon fat until yellow 3/4 cup chopped onions. Mix in flour, sugar, salt, celery seed and pepper. Stir in gradually and cook until mixture boils: water and vinegar. Pour over potatoes, add bacon (save some for top of dish to garnish with minced parsley).
