YAKKA-MESSI
1 sm. can Spam
2 eggs#
2 carrots
1 lg. onion
1 c. cabbage
2 c. raw rice
Oil
Kikkoman soy sauce
1 tsp. garlic powder
1 tbsp. seasoned salt
2 tsp. black pepper
1 tbsp. MSG

Cook rice according to package directions. For best results, make rice a couple of hours before preparation.

#Scramble the eggs in a bowl. Heat a small amount of oil in a skillet. (For best results, use a no-stick fry pan.) When oil is hot, pour eggs into pan. DO NOT STIR. When edge of egg is cooked turn over and turn off the heat. It will finish cooking itself. Dice egg when cooled.

The Spam, onions and cabbage should be diced in medium size pieces. The carrots should be peeled and grated. All these preparations should be done ahead of time.

Use a wok or large skillet at about 250 to 300 degrees.

Pour about 1/4 cup of oil into wok. Turn on heat. Add Spam only. Brown, stirring frequently.

Add carrots, onion and cabbage and cook just until tender. Add pepper, MSG, seasoning salt, garlic powder and soy sauce to taste. Add diced eggs.

Reduce heat and add rice. Break up rice before adding to cooked mixture. Mix thoroughly, adding a few shakes of soy sauce to the rice at the end.

You can increase the recipe by using a large can of Spam and increasing the other ingredients by 50%.

You can also substitute with chicken, beef, pork and shrimp. Chinese pea pods are also delicious with the chicken variation.

Try your own variations. Make sure you make allowances for moisture changes in different foods. Some things can be pre-cooked and added just before the rice.
