ZUCCHINI AND CHEESE BAKE 
3 med. zucchini
1/3 c. chopped onion
1 tbsp. butter
3/4 c. chopped tomato
1/4 tsp. salt
Dash of pepper
1 c. grated Cheddar cheese
4 crisply cooked bacon slices, crumbled

Trim ends of zucchini. Cook, covered in boiling salted water, for 5-8 minutes; drain. Cut in half lengthwise. Scoop out centers; set halves aside. Chop cooked zucchini centers. Saute onion in butter; stir in chopped zucchini and remaining ingredients. Fill zucchini halves; place in baking dish. Bake at 350 degrees for 25-40 minutes or until lightly browned.
