BREAKFAST COOKIES 
1 c. grated carrots
1/2 c. nonfat plain yogurt
1/4 c. brown sugar
2 tbsp. vegetable oil
1 tsp. vanilla
1 1/2 c. chopped pitted dates or raisins
1 1/2 c. sifted cake flour
1/4 c. Grape-Nuts cereal
1/2 tsp. baking soda
1/2 tsp. salt

Preheat oven to 350 degrees. Spray baking sheets with non-stick cooking spray or line with parchment paper.

In medium mixing bowl, stir carrots, yogurt, sugar, oil, vanilla and dates or raisins. Let stand 15 minutes. Stir in remaining dry ingredients until well blended.

Drop tablespoons of mixture onto baking sheets, spacing 1 1/2 inches apart. Reduce to teaspoon drops for mini-size cookies. Bake 15 minutes or until cookie top springs back when lightly touched. Cool. Makes 2 1/2 to 3 dozen cookies.
