CHOCOLATE BUTTERMILK CAKE | |
1 2/3 c. all-purpose flour 1 c. sugar 1/3 c. cocoa 1 tsp. baking soda 1/2 tsp. salt 1 c. non-fat buttermilk 1/3 c. vegetable oil 1 tsp. vanilla extract Vegetable cooking spray 1 tsp. sifted powdered sugar Fresh strawberries (optional) Sift first five ingredients in a large bowl; make a well in center of mixture. Add buttermilk, oil and vanilla, stirring until smooth. Spoon batter into a 9 inch round cake pan coated with cooking spray, and bake at 375 degrees for 20 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan. Sprinkle lightly with powdered sugar, and garnish with strawberries, if desired. Cut into 18 portions to serve. Makes 18 servings. |
