PORK CHILI VERDE 
2 tbsp. oil
6 cloves garlic, chopped
2 lbs. pork, stir-fry size
1 lb. onions, 1 inch chop
10 roasted peppers, cleaned and chopped
1 can green chilies, chopped
1 (28 oz.) canned tomatoes, chunk with hands, fresh tomatoes are better if available
Jalapenos, optional (to taste)
Cilantro, optional (to taste)
Cumin, optional (to taste)
Chili powder, optional (to taste)
Salt and pepper to taste
Shredded Cheddar

Cook pork and onions with garlic until browned. Add other ingredients. Cook about 2 hours until pork is tender. Serve with macaroni if desired. Garnish with cheese.
