ALMOND - BRAN MUFFINS 
1/2 cup whole wheat flour, sifted
1/2 cup blanched almond flour, sifted
1 1/2 cups baker's bran
1 tsp. baking soda
3/4 cup golden raisins
1 egg
3/4 cup half and half
1/2 cup dark molasses
2 tbsp. canola oil

Preheat oven to 375°F

In a mixing bowl, stir together: flours, bran, baking soda (ensure no lumps) and raisins.

Note: When adding raising to dry mix, take time to separate them (no clumps) and stir them into the dry mix to ensure the raisins are individually dusted. This will ensure an even distribution of raisins in the muffins.

In a separate mixing bowl, stir together: egg (well beaten), half and half, molasses and canola oil.

Pour mixed liquid into dry ingredients. Stir only enough to wet all dry mix. Fill muffin papers only half full. Bake at 375°F for 16 minutes.

Should make about 16 muffins.
