CHICKEN GARDINER 
1 boneless chicken breast per person
Slices of boiled ham
Slices of Swiss cheese
butter
1/2 c. Parmesan cheese
2 c. bread crumbs

Fold 1 slice ham and 1 slice Swiss cheese inside chicken breast. Secure with toothpick. Dip in melted butter, then in combined Parmesan and crumbs. Place in casserole.

SAUCE:

1 c. currant jelly
1 (6 oz.) can orange juice concentrate
1/4 c. dry sherry
1 tsp. dry mustard
1/8 tsp. ginger
1/4 tsp. hot pepper sauce
1 tbsp. lemon juice

Simmer for 15 minutes. Pour 3/4 of sauce over top. Bake at 350 degrees for 1 hour, basting with remaining sauce every 15 minutes.
