CITRUS ZUCCHINI SAUTE | |
2 medium zucchini, sliced 1 medium crookneck squash, sliced 2-3 green onions, chopped or sliced thin 1 fresh garlic clove, chopped finely 5 large leaves pineapple sage, chopped 5 large leaves lemon verbena, chopped (lemon basil will work too) 2 medium jalapeno peppers, chopped 1 tbsp. butter In a medium frying pan add butter and melt over low heat. Slice cleaned squash and onion. Finely chop or press garlic, chop fresh pineapple sage and lemon verbena or lemon basil, and jalapeno peppers. Add all ingredients to pan and sauté on medium heat until done. Note: I like mine a bit on the fried side or you could cook until still just on the firm side. Submitted by: Wanda Anderson |
