BREAD STUFFING 
2 med. onions, finely chopped
2 c. celery, chopped
1 c. butter
8 c. sm. bread cubes (whole wheat)
1 1/2 c. bran
2 1/2 tsp. sage
1 1/2 tsp. thyme

Fry onions and celery in 1 cup butter until tender. In a large bowl, combine the onions and celery mixture, the small bread cubes, the bran, and the spices. Makes enough for 12.

Mushroom Stuffing: Add 1/2 cup mushrooms sauteed with onions for every cup of bread cubes. Reduce bread cubes to 6 cups for recipe above.
