CHOO CHOO FRIED RICE 
2 or 3 eggs
1/2 tsp. dry sherry
1/2 tsp. MSG (optional)
4 tbsp. cooking oil
2 tbsp. minced onion
4 c. cooked rice (warm or cold)
1 1/2 tsp. salt, or to taste
1/2 c. diced ham (optional)
1/2 c. green peas (fresh or frozen)

Beat eggs with sherry and MSG. Pour oil into hot skillet over medium high heat. Stir in minced onion and beaten eggs. Scramble the eggs into small pieces. Add rice, salt, ham (if used) and peas. Stir constantly for 8-10 minutes until the ingredients are well blended and heated.
