VEGETABLE PANCAKES 
2 med. potatoes
1 med. onion
1/4 to 1/2 c. grated Parmesan cheese
1/2 tbsp. garlic powder
1 tsp. ground white pepper
1 tsp. salt
Shortening
Flour
1 lg. egg
1 sm. zucchini
1 sm. carrot

Peel potatoes and grate. Grate remaining vegetables, add to potatoes and mix along with cheese, egg, salt, and spices. Add enough flour to tighten up the mixture. In a skillet, add enough shortening to pan fry. Make small thin pancakes, fry both sides golden brown. It may be necessary to bake in oven to insure the centers are done.

Do not use a microwave, makes too soft.

Don't over mix the flour, makes too tough.

Other vegetables can be added.

Since microwave ovens vary in power, you may need to adjust your cooking time.
