SCALLOPED POTATOES 
5 potatoes
1 sm. jar pimiento
1 med. size onion, chopped
1/4 lb. butter
1 tbsp. flour
1 tsp. salt
2 cans cream of mushroom soup
1 c. milk
1 lb. Longhorn cheese

Boil potatoes in jackets; peel and slice. Arrange sliced potatoes in buttered baking dish. Combine remaining ingredients in a saucepan. Stir over low heat until blended and cheese is melted. Pour over potatoes. Bake at 300 degrees for 45 minutes. Serves 20.
