EASY PICKLED BEETS 
1 can beets (wedges, sliced or sm. whole)
1 c. sugar
1/2 c. vinegar
1/2 c. beet juice

Drain beets (save juice). Measure juice to make 1/2 cup liquid. Make syrup by adding sugar and vinegar to juice mixture, boil. Add beets and boil 1 minute. Store in jar in refrigerator.
