PEACHES IN BRANDY CREAM 
6 lg. peaches, peeled, sliced
1 c. powdered sugar, sifted
1 pt. whipping cream
1/2 c. peach brandy
1 tsp. vanilla extract
Mint sprigs

Place peaches in medium bowl; sprinkle with 1/2 cup powdered sugar. Stir gently to coat. Set aside.

Beat cream with mixer until peaks just begin to form, about 3 minutes. Beat in remaining 1/2 cup powdered sugar, peach brandy and vanilla.

Beat just until soft peaks form, about 2 minutes. Fold whipped cream mixture into peaches; serve in glass bowl. Garnish with mint springs. 4-6 servings.
