PAN ROASTED POTATOES 
6 lg. potatoes
1/3 c. canola oil or butter

Pare and quarter potatoes and precook 10 minutes in boiling water. Drain. Arrange potatoes in a single layer in baking dish (9 x 13 inches). Pour oil or melted butter over potatoes. Roll each piece to coat with the oil or butter. Bake uncovered. Turn potatoes every 15 minutes. Bake 1 hour at 400 degrees. Makes 5 to 6 servings.
