JOAN'S PAN SCALLOPED POTATOES 
2 tbsp. butter
2 c. raw cubed potatoes
1/4 c. chopped onion
Salt and pepper to taste

Cook over low heat until onion is transparent, 3 to 4 minutes. Stir occasionally. Add 1/2 cup boiling water and 1 cup evaporated milk. Cook 25 to 30 minutes. Add 2 tablespoons Parmesan cheese just before serving.
