BEEF ENCHILADAS | |
1 1/2 lb. hamburger chuck 1 can Old El Paso refried beans 3 or 4 c. grated Cheddar cheese 3 little cans Old El Paso enchilada sauce (mild) 1 pkg. soft medium tortilla shells jalapeo peppers (optional) lettuce, tomatoes, sour cream, salsa (toppings) salt and pepper to taste Brown hamburger meat, then drain grease. Put back in pan. Add 1 can of refried beans. Add 1 can of mild enchilada sauce. Simmer for 15 minutes. Preheat oven to 350°F. Begin putting cheese and meat mixture in shells; roll them up and place in oblong dish to place in oven. Pour 1 to 2 cans of enchilada sauce over enchiladas. Sprinkle 2 cups of grated Cheddar cheese over top of enchiladas. Place a few jalapeo peppers on top, if desired. Bake 30 to 40 minutes. Add desired toppings when served. |
