HAMBURGER RICE CASSEROLE 
1 sm. onion
3 tbsp. oil
1 lb. ground beef
1 1/4 c. uncooked converted long grain rice
1-2 tsp. paprika
1/2 tsp. allspice
1 clove garlic
1/4 tsp. cayenne pepper
3 1/2 c. chicken broth
1 (10 oz.) frozen corn or 12 oz. can corn with juice
1 (10 oz.) frozen peas
1/2 chopped green pepper
1 (15 oz.) can tomatoes
1 (8 oz.) can stewed tomatoes
Salt and pepper to taste

In electric frying pan saute green pepper, onion and garlic in oil until clear and golden. Add meat and brown; drain. Add rice and seasonings and mix well. Add broth and juice from tomatoes. Cook with lid at simmer for 20-30 minutes (check periodically to see if it needs more broth). Then add corn, peas, and tomatoes and cook without lid about 10 minutes. Makes a lot and freezes well.
