FLORENCE'S HAMBURGER - RICE
CASSEROLE
 
3 1/2 c. water
1 c. rice (not instant)
1 tsp. salt
1 lb. lean ground beef
1 1/2 c. chopped celery
1 c. chopped onion
1 can chicken with rice soup
1 tbsp. butter
1/4 c. soy sauce
2 tbsp. brown sugar
1 (4 oz.) can mushrooms

Heat oven to 350 degrees. Bring water to boil in saucepan. Add rice and salt. Remove from heat, cover, and let stand while preparing rest of ingredients. Brown ground beef; drain fat. Add celery and onion, cook 5 minutes. Add butter, soy sauce, brown sugar, mushrooms, soup, and rice (including water). Mix thoroughly. Pour into greased 3 quart baking dish. Cover and bake 30 minutes. Uncover and bake 30 minutes more.
