GROUND BEEF - BROCCOLI RICE
CASSEROLE
 
1/2 lb. ground beef
1/2 c. cracker crumbs
1 egg
1/4 c. onion, chopped
1/4 tsp. salt
2 c. cooked rice
1 dash pepper
1 (8 oz.) jar processed cheese
1 (10 oz.) pkg. frozen, chopped broccoli, thawed and drained
1 c. tomatoes, chopped
1 tsp. basil
1 tbsp. butter, melted

Preheat oven to 350°F. Combine meat, cracker crumbs, egg, onion and salt. Form into small meatballs. Brown in oil. Combine rice and pepper. Place rice in 2-quart casserole dish. Place cooked meatballs on top of rice. Combine cheese spread, broccoli, tomatoes and basil. Pour over rice and meatballs.

Bake for 30 minutes.
