ZUCCHINI QUICHE 
1 (9 inch) pie crust
1 tsp. Dijon mustard
2 eggs, beaten
2 c. shredded Mozzarella cheese
4 c. sliced zucchini
1 c. chopped onion
2 tbsp. parsley
1/2 stick butter
1/2 tsp. basil
1/2 tsp. salt
1/2 tsp. oregano
1/2 tsp. garlic powder

Spread mustard in pie crust. Mix egg and cheese together. Saute zucchini, spices and onions in 1/2 stick butter. Add to egg and cheese mixture. Pour in pie crust and bake at 350 degrees for 35 to 40 minutes.
