ZUCCHINI QUICHE 
3 c. zucchini, thinly sliced
1 med. onion, chopped
1 tbsp. parsley flakes
4 eggs, beaten
1/2 c. Parmesan cheese
1 c. Bisquick
1/2 c. oil
Salt and pepper

Combine zucchini, onion, parsley, salt, and pepper. Add Bisquick, eggs, oil, and cheese. Mix and pour into a 9 inch pie pan. Bake at 350 degrees for 40-45 minutes or until set.
