DILLED ZUCCHINI QUICHE | |
1/2 lb. grated zucchini 4 eggs lightly beaten, may use egg substitute 1 1/2 c. sour cream, IMO in place of sour cream 1/2 c. grated Swiss cheese, low fat Crumbled bacon, substitute if wanted 1 9 inch pie shell Salt, ground pepper Fresh chopped dill (1 tsp.) Salt substitute Preheat oven to 375 degrees. Place grated zucchini in a colander and sprinkle with light salt. Let stand 1 hour. Add dill and sour cream to eggs, salt and pepper added. Squeeze juice from zucchini by wrapping in cheese cloth. Sprinkle zucchini and bacon crumbs on bottom of pie shell. Add egg and cheese mixture. Bake 40 minutes. Serves 6. |
