ITALIAN ZUCCHINI QUICHE 
2 tbsp. olive oil
1 c. sliced zucchini
1/2 c. thinly sliced onion
2 cloves garlic, crushed
2 fresh tomatoes, sliced
3 eggs
1 c. milk
4 tbsp. Parmesan cheese
4 oz. grated Mozzarella cheese
1 unbaked 9 inch pie shell

In medium skillet, heat olive oil and saute zucchini, onions, and garlic for 5 minutes. Cool slightly and place in unbaked pie shell. Cover with tomato slices, beat eggs, milk, Parmesan cheese and half the Mozzarella. Pour over zucchini and tomato. Bake at 400 degrees for 10 minutes. Lower heat to 350 degrees and bake for 25 minutes. Remove and sprinkle remaining Mozzarella cheese; allow to set for 5 minutes and enjoy.
