LEMON COCONUT PIE 
3 eggs, beaten
1 1/4 c. sugar
1 stick butter, melted
6 tbsp. lemon juice
1 tsp. vanilla
1 1/4 c. coconut
1 unbaked pie crust

Combine all ingredients and pour into an unbaked pie crust. Bake for 15 minutes at 400 degree, then turn to 350 degrees and bake for another 40 minutes or until browned slightly.
