CHEESY CHICKEN 
1 chopped onion
1 chopped bell pepper
2 c. diced celery
3 c. diced cooked chicken (or turkey)
1 c. chopped pimento
2 cans undiluted cream soup (chicken or mushroom or celery)
1 c. sliced mushrooms
3/4 c. slivered almonds
Shredded sharp Cheddar cheese
Rice

Steam in microwave or saute until limp the first 3 ingredients. Combine these with the chicken, pimento, soups, mushrooms and almonds; heat thoroughly. Serve over Saffron rice or white rice and sprinkle generously with cheese. Serves 8-10. This freezes very well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
