HIGHLAND POT ROAST 
1 lb. lean beef round
3 tbsp. flour
1/2 lb. link sausages
4 med. potatoes
1 onion
2 apples
Salt & Pepper
2 c. tomato juice
3 beef bouillon cubes
Pinch of sage

Preheat oven to 350 degrees. Cut beef round into cubes and dredge in flour. Cut sausages in slices. Peel and slice potatoes, onion and apples into slices 1/4" thick. In a 2 quart casserole, put half of mixed potatoes, onion and apple. Add meat, then remaining vegetable mixture. Sprinkle each layer lightly with salt and pepper. Heat juice and add bouillon cubes. Sprinkle sage over vegetable layer, then heated juice. Cover and bake for 1 1/2 hours. Makes 4 to 6 servings.
