SOUTHERN CORN DODGERS 
1 c. cornmeal
3 c. boiling water
2 eggs, beaten
1 tsp. sugar
1/4 tsp. salt
1 sm. onion, diced

Pour meal slowly into boiling water; cook about 3 minutes, stirring constantly. Set aside to cool. Add eggs, sugar, salt, and diced onion. Mix well and drop by spoonfuls into hot deep oil, fry until golden brown. Yield about 6 servings.
